Homemade Mother's Day Lunch Ideas Every Student Can Cook!

Wanting to treat that special lady in your life with a lovely lunch on Mother’s Day? Then keep reading!

With COVID-19 restrictions still in place, we, unfortunately, won’t be able to treat our mums to a meal out this year – but that’s okay.

There’s nothing stopping you from rustling up your mum a yummy lunch in the comfort of your own student accommodation!

So, say goodbye to Super Noodles and hello to a delicious Mother’s Day lunch, because we’ve got the best homemade meal ideas.

1. Homemade Afternoon Tea

Nothing says a Mother’s Day lunch like a spot of afternoon tea – right?

It may seem super boujee, but you can actually create a homemade afternoon tea for a pretty decent price!

All you need to do is create your own finger sandwiches with your filling of choice and grab some Buck’s Fizz from your local supermarket.

Popular sandwich fillings include smoked salmon and cream cheese, ham and mustard, egg and mayonnaise, and cucumber and cream cheese.

Onto the best part…the scones! Just grab some scones from the shop with some clotted cream and jam (we vote raspberry.)

If your mum loves a cuppa, make sure you’ve got plenty of tea bags in, you could even try the new Taylors of Harrogate toast and jam tea!

2. Spring Chicken Stew

There’s nothing like a good old stew, it’s easy to make, filling, and always a mum favourite!

For this Mother’s Day lunch you’ll need a large, heavy pan with a lid (preferably a casserole dish) – you could borrow your mums 😉

Ingredients

  • 1 Onion
  • 500g boneless, skinless chicken thigh
  • 300g small new potatoes
  • 425ml low-salt vegetable stock
  • 350g broccoli
  • 350g spring greens
  • 140g petit pois
  • Spring onions
  • 2 tbsp pesto

The best part about this dish though? You literally just have to pop it all in a pot and let it cook!

That means you don’t have to do much work, and it’ll still end up being super delicious – what a winner.

In the meantime, sip on some bucks fizz with your mum and chill out, as you watch your spring chicken stew cook!

3. Victoria Sponge

Nothing says Mother’s Day lunch like a classic, homemade Victoria sponge, absolutely delicious!

A cuppa and some cake with your mum is always the best, it gives you a chance to have a natter and relax.

So, if you see yourself as one of the next Great British Bake Off contestants in the tent with Noel Fielding and Matt Lucas, give this one a go.

Although this may require a trip to your local supermarket, it’ll be so worth it when you take a bite – that’s for sure.

Ingredients:

  • 200g caster sugar
  • 200g softened butter
  • 4 eggs
  • 200g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk
  • 100g butter
  • 140g icing sugar
  • Vanilla extract
  • 340g strawberry jam
  • Icing sugar

4. Spaghetti Carbonara

Yassss now you’re talking! A classic spaghetti carbonara is so easy to make and is always a very impressive dish.

You’re definitely going to impress your mum for Mother’s Day lunch with this absolute beauty!

Ingredients:

  • 400g spaghetti
  • 1 tbsp olive oil
  • 200g smoked pancetta cubes or streaky bacon
  • 2 garlic cloves
  • 3 eggs
  • 75ml double cream
  • 50g parmesan

FYI – the double cream is entirely optional; you can still get it nice and creamy just with the parmesan and eggs!

5. Pancakes

Just because pancake day has been and gone, doesn’t mean we can’t enjoy some stacked pancakes with our mums.

The beauty of the pancake is that it can be eaten any time of day, and still taste utterly delish every.single.time.

Whether it’s American-style pancakes, scotch pancakes, or the classic pancake, they’re really easy to make.

For this Mother’s Day lunch in your student accommodation, make sure you’ve got all your mum’s fave toppings!

So what will it be? Blueberries? Nutella? Maybe some banana?

6. Homemade Pizzas

Every student loves pizza, that’s just a fact, so why not make your very own with your mum for this Mother’s Day lunch!

Not only will it be a fun activity, but it’ll taste amazing too, and will be slightly healthier than a takeaway pizza 😉

You can even be super lazy about it and grab some ready-rolled pizza dough from your local supermarket.

Grab some tomato puree, lather it on your pizza base and add as many toppings as you like – that’s the beauty of it.

  • Knob of butter
  • Rashers of streaky bacon
  • 300g risotto rice
  • 1l hot vegetable stock
  • 100g frozen peas
  • Freshly grated parmesan

8. Lasagne & Garlic Bread

Now THIS, is an absolute classic! It’s super easy to make but not too boring, with bags of flavour.

Lasagne is the perfect meal for your mum for a filling, hearty Mother’s Day lunch, and here’s what you need for it.

Ingredients:

  • Olive oil
  • 2 rashers
  • 1 onion
  • 1 celery stick
  • 1 medium carrot
  • 2 garlic cloves
  • 500g beef mince
  • 1 tbsp tomato puree
  • 2 400g cans of chopped tomatoes
  • 1 tbsp clear honey
  • 500g pack fresh egg lasagne sheets
  • 400ml crème fraiche
  • Mozzarella ball
  • Freshly grated parmesan
  • Basil leaves
  • Stick of garlic bread/flatbread

We know what you’re thinking, it may seem like a lot of ingredients for the lasagne, but you’ll have loads of leftovers!

The good thing about lasagne is once you’re prepared with your ingredients, it’s a super easy process.
